About the role
The guide who feeds tourists the real city. The food tour guest who follows their guide into the smoke of Mercado de Medellín — who eats a quesadilla made in front of them on a comal, who drinks a tejuino from a clay cup, who sits on a plastic stool at a taco stand surrounded by locals having lunch — has experienced Mexico City in a way that no hotel restaurant provides.
