Purchasing Manager

Responsibilities

• Lead the complete purchasing function for a Cancún large all-inclusive resort or hotel group: manage a purchasing team of 3–8 professionals, own the annual procurement budget, and develop the procurement strategy that balances cost, quality, and supply reliability for a resort serving 400–2,000 guests daily
• Develop and manage the resort's approved vendor list: qualify suppliers across all purchasing categories (food and beverage, FF&E, amenities, cleaning supplies, linen, and engineering materials), manage annual supplier contracts with volume commitments and pricing guarantees, and maintain the active supplier relationship that ensures priority service during high-demand periods
• Execute the resort's competitive bidding process for major purchases: annual F&B supply contracts, linen replacement programs, and FF&E procurement require formal RFQ (Request for Quotation) processes — the Purchasing Manager manages the competitive bid, evaluates responses with the department head, and awards the contract with the documentation required by the hotel controller and ownership
• Manage the Quintana Roo supply chain complexity: Cancún's geographic location creates a supply chain that balances CDMX wholesale market shipments (2-day lead time), local Cancún distributors (same-day), and direct imports for categories without reliable domestic supply — the Purchasing Manager designs the par stock levels and reorder triggers that account for each supply chain's lead time
• Negotiate annual contracts for the resort's major cost categories: food and beverage procurement represents the resort's second-largest operating cost after labor — the Purchasing Manager's annual contract negotiations with the property's major F&B suppliers directly impact the resort's EBITDA
• Lead the purchasing team's compliance with SAT CFDI requirements, the hotel's internal controls, and the Quintana Roo health authority's supplier certification requirements for food safety

Requirements

• Purchasing Manager or Procurement Manager experience; large hotel or food service employer preferred
• Supplier negotiation and contract management at volume scale
• Quintana Roo supply chain knowledge
• SAT CFDI and hotel internal control compliance
• Team leadership; English and Spanish bilingual preferred
