Purchasing Manager

Responsibilities

• Lead the purchasing function for a Los Cabos five-star or ultra-luxury resort: manage a purchasing and storeroom team of 5–10 professionals, own the annual procurement budget, and develop the supply chain strategy that supports the property's ultra-luxury F&B and guest experience program with consistent product quality and supply reliability
• Manage the Baja California Sur supply chain in its full complexity: design the supply chain architecture for each category — CDMX wholesale (2-day lead time, primary dry goods), Sea of Cortez daily fishing fleet (morning delivery for seafood), La Paz wholesale market (48-hour lead time for seafood backup), Culiacán agricultural market (fresh produce, 2-day lead time), Baja Valle wine direct imports (Valle de Guadalupe and Valle de San Vicente), and international specialty items (air freight from CDMX international airport for Japanese product, European cheese, and premium pantry) — managing the par stock levels for each lead time category
• Negotiate the resort's major supplier contracts: the annual bluefin tuna allocation from the Sea of Cortez fishing cooperative, the Baja Valle wine cellar's exclusive allocation for the property, the primary CDMX wholesale distributor's annual agreement — each requires commercial negotiation at the level the ultra-luxury product demands
• Manage the resort's beverage purchasing with cellar management responsibility: the Los Cabos ultra-luxury resort's wine program includes allocations from Bordeaux, Burgundy, Napa, and Baja Valle that are purchased as futures and cellar-aged at the property — the Purchasing Manager manages the wine purchase cycle, the cellar inventory management, and the annual cellar valuation with the sommelier team
• Lead the purchasing compliance program: SAT CFDI compliance for all purchasing, the hotel's internal purchasing controls, the COFEPRIS certification requirements for food suppliers, and the Los Cabos health authority's food service supplier registration
• Build and develop the purchasing team with the professional quality that a Los Cabos ultra-luxury operation requires

Requirements

• Purchasing Manager experience at a luxury hotel; Baja California Sur or Los Cabos preferred
• Baja California Sur supply chain management
• Luxury beverage and wine purchasing with cellar management experience
• SAT CFDI compliance and hotel internal controls
• English and Spanish bilingual; French an advantage for European wine supplier communication

About the role

The Los Cabos Purchasing Manager who travels to the Valle de Guadalupe in February — who visits the three Baja Valle boutique producers that supply the property's exclusive wine list, who tastes the barrel samples with the winemakers, who allocates the 2026 vintage releases for the property's cellar, and who negotiates the annual allocation at a price that reflects both the quality the property demands and the relationship that has taken 4 years to build — has done the procurement work that no spreadsheet analysis could replicate. The wine list that the sommelier builds for the following year depends on the allocations the Purchasing Manager secured in February. The guest who drinks the 2026 Baja Valle Nebbiolo in December 2027 is drinking the result of that February trip.
