Responsibilities
- Manage the purchasing and storeroom function for a Mérida colonial boutique or four-star hotel: as the primary purchasing professional for the property, manage the daily and weekly purchasing cycle across all categories, coordinate supplier deliveries, execute goods receipt and storeroom organization, manage the physical inventory, and maintain the CFDI compliance and purchasing records required by the accounts payable team
- Develop and maintain the hotel's Yucatán regional supplier program: the Mérida boutique hotel's culinary identity depends on authentic Yucatecan ingredients — the purchasing coordinator builds direct relationships with the Oxkutzcab habanero cooperative, the Valladolid honey producer, the Hunucmá fishing cooperative for fresh Gulf of Mexico fish, and the Mercado Lucas de Gálvez recado spice blenders who are the custodians of Yucatán's living food tradition
- Manage the heat season purchasing protocol (April–June): Mérida's 38–42°C heat creates cold chain vulnerability for all deliveries — the purchasing coordinator schedules all fresh food deliveries for pre-9 AM arrival, verifies cold chain temperature at receipt with a calibrated thermometer, and rejects any delivery where cold chain has been broken during transit
- Manage the storeroom organization and FIFO discipline in Mérida's extreme ambient temperature: the dry goods storeroom must be maintained at a temperature that prevents accelerated product degradation during the heat season — the purchasing coordinator coordinates with engineering on the storeroom temperature management and increases the stock rotation frequency during peak heat months
- Process CFDI compliance for all hotel purchasing: manage supplier invoice validation, coordinate the three-way match process, and guide the small regional producers who are transitioning to CFDI emission on the digital invoice process
- Coordinate the Chichén Itzá high-season and Hanal Pixán cultural event purchasing plan: the hotel's demand peaks align with the archaeological tourism calendar — the purchasing coordinator prepares the pre-peak stock build and the Hanal Pixán event purchasing list (pib ingredients, xtabentún liqueur, Yucatán Day of the Dead flower program from the Mercado Lucas de Gálvez)
Requirements
- Purchasing and storeroom experience; Yucatán state hotel or food service employer preferred
- Yucatán regional ingredient supplier network knowledge
- Heat season cold chain management
- SAT CFDI compliance management, including guidance for small regional producers
- Spanish native; English functional for the hotel's international guest market; French awareness an advantage
