Responsibilities
- Lead the purchasing function for a CDMX five-star hotel or hotel group: manage a purchasing and storeroom team of 4–10 professionals, own the annual procurement budget for all categories, and develop the supply chain strategy that supports the hotel's F&B program and guest experience with consistent quality, controlled cost, and CDMX-specific logistics management
- Develop the hotel's specialty supplier network in CDMX's rich food and beverage ecosystem: the CDMX luxury food importer landscape (European cheese, Japanese product, premium spirits, artisan chocolate) is the most developed in Mexico — the Purchasing Manager builds the hotel's specialty supplier portfolio directly with the importers and producers who supply the restaurant's distinctive menu identity
- Manage Central de Abasto relationships for the hotel's fresh food purchasing program: the Central de Abasto's daily operations require a purchasing team member presence for perishable buying — the Purchasing Manager develops the hotel's Central de Abasto buyer relationships (produce purveyors, fresh flower vendors, fresh fish merchants) and coordinates the daily purchasing schedule
- Execute the hotel's major supplier contract program: negotiate annual contracts for the hotel's largest cost categories, benchmark against CDMX luxury hotel competitor purchasing data, and manage the cost savings program that contributes to the hotel's EBITDA performance
- Manage the CDMX purchasing compliance program: SAT CFDI compliance for all purchasing, COFEPRIS and SEDESA food supplier certification management, and the hotel's internal three-way match purchase control
- Lead the hotel's banquet and event purchasing logistics: the CDMX five-star hotel's event business (corporate events, gala dinners, state receptions) requires purchasing at volumes and with lead times that are distinct from the daily restaurant operation — the Purchasing Manager manages the event purchasing plan from the confirmed event BEO to the delivery execution
Requirements
- Purchasing Manager experience at a CDMX luxury hotel or professional services employer
- CDMX specialty food importer and Central de Abasto relationship management
- SAT CFDI, COFEPRIS, and SEDESA compliance
- Major supplier contract negotiation at CDMX luxury hotel scale
- English and Spanish bilingual; team leadership
