Responsibilities
- Manage the storeroom operations for a CDMX five-star hotel: supervise the storeroom team (2–4 storekeepers), manage goods receipt for all hotel purchasing categories, maintain cold and dry storage, and execute the daily requisition cycle for a CDMX luxury hotel serving 150–500 guests and a large F&B department that includes multiple dining venues, banquet operations, and a substantial in-room dining program
- Manage Central de Abasto purchasing coordination: the CDMX hotel's fresh produce and fresh seafood purchasing includes pre-dawn Central de Abasto runs — the storeroom supervisor coordinates with the purchasing team on the daily Central de Abasto list, verifies the produce received against the quality standard, and integrates Central de Abasto deliveries into the daily receiving workflow
- Supervise FIFO inventory discipline for a high-volume F&B operation: the CDMX five-star hotel's banquet and restaurant volume makes FIFO management critical — the storeroom supervisor enforces FIFO rotation and manages the expiry risk escalation process with the executive chef to prevent product waste
- Manage the Hoy No Circula delivery scheduling: the CDMX vehicle restriction program (Hoy No Circula) affects which supplier vehicles can deliver on which days — the storeroom supervisor maintains awareness of the rotation schedule and coordinates with the purchasing team and suppliers on alternative delivery days when their vehicle's plate number is restricted
- Execute the weekly and monthly physical inventory count: coordinate the count team, manage the count accuracy, and produce the variance report for the Purchasing Manager — the CDMX five-star hotel's food cost control requires monthly physical count accuracy
- Maintain the receiving dock, cold storage, and dry goods areas in compliance with the CDMX health authority (SEDESA) and COFEPRIS food safety standards
Requirements
- Storeroom supervisor experience; luxury hotel or food distribution preferred
- Central de Abasto purchasing and produce quality assessment
- Hoy No Circula delivery scheduling management
- FIFO discipline and high-volume F&B storeroom management
- SEDESA and COFEPRIS food safety compliance awareness
