Responsibilities
- Lead the purchasing function for a Playa del Carmen five-star hotel or resort: own the annual procurement budget for food, beverage, amenities, linen, and operating supplies; manage the supplier qualification and contract process; and develop the supply chain strategy that balances quality, sustainability, and cost for the property's specific market position
- Develop the hotel's supplier contract program for the major cost categories: negotiate annual contracts for the hotel's top 20 suppliers by spend, securing volume-committed pricing that gives the property's department heads stable food costs and the finance team predictable supply cost in the P&L
- Manage the Riviera Maya supply chain: the PDC hotel's supply base includes CDMX wholesale suppliers (2-day lead time), local Cancún and PDC distributors (same-day to next-day), and direct regional producers — the Purchasing Manager designs the supply chain that minimizes lead time risk while optimizing cost
- Lead the hotel's sustainable sourcing program: the PDC five-star market's European guest profile rewards the hotel that can genuinely communicate sustainable sourcing in its F&B narrative — the Purchasing Manager builds and maintains the sustainable supplier certifications and the sustainable sourcing story that the F&B team uses in guest communication
- Manage capital purchasing for FF&E and renovation projects: the five-star PDC hotel's renovation cycles and FF&E replacement program require competitive bidding, shipping coordination (some FF&E imported), and project delivery management alongside the daily operational purchasing function
- Maintain full SAT CFDI compliance and the hotel's internal purchasing control procedures
Requirements
- Purchasing Manager experience at a hotel or food service employer; Riviera Maya market knowledge preferred
- Supplier negotiation and annual contract management
- Sustainable sourcing program development and supplier certification management
- Riviera Maya supply chain management
- English and Spanish bilingual; SAT CFDI compliance
