Responsibilities

  • Lead kitchen of CDMX's Cantonese restaurant serving the Chinese-Mexican community and broader market
  • Execute Cantonese techniques — steaming, poaching, roasting, stir-frying with wok hei
  • Manage dim sum service — dim sum carts and à la carte steamed and fried dim sum selections
  • Produce Cantonese roasted meats — char siu, roasted duck, soy chicken
  • Maintain authentic Cantonese flavor profiles with Mexican ingredient substitutions where necessary

Requirements

  • 5+ years kitchen experience with Cantonese or Chinese cuisine specialization
  • Wok hei mastery — the distinctive breath of the wok achieved through high heat, seasoned carbon steel, and precise technique
  • Dim sum production knowledge
  • Understanding of CDMX's Chinese-Mexican community and their culinary expectations
