Kitchen Assistant – Hacienda Events

Responsibilities

• Support hacienda event kitchen during weddings, celebrations, and corporate events
• Assist with large-scale Yucatecan food production — cochinita pibil for 200, sopa de lima service
• Maintain event kitchen cleanliness during production
• Transport food from kitchen to hacienda event spaces
• Assist with post-event breakdown and cleaning
• Support pit-cooking events — cochinita in the pib (underground oven) is a spectacular event production

Requirements

• Interest in Yucatecan event cuisine
• Physical stamina for long hacienda event days
• Reliability for weekend event schedule

Work environment

Hacienda event venue outside Mérida. Yucatán's haciendas are historic properties converted to event venues — spectacular colonial architecture in the henequen heartland of Yucatán.

About the role

Cooking cochinita in a hacienda. A pit-cooked cochinita pibil for 200 guests at a Yucatecan hacienda wedding — the banana-leaf wrapped pork lowered into the earth the night before, the slow coal heat, the unwrapping ceremony the following morning — this is food production at its most ceremonial and its most Yucatecan.
