Responsibilities
- Operate commercial dishwasher in Oaxacan restaurant or hotel kitchen
- Hand-wash traditional Oaxacan clay cookware — black clay (barro negro) cooking pots and serving pieces are Oaxaca's UNESCO-recognized artisan heritage; they require careful hand washing
- Maintain kitchen cleanliness
- Manage washing of the comals (large flat griddles) used for tlayuda and tortilla production
- Assist with post-mole-production pot washing — mole negro creates significant cleaning requirements
- Follow HACCP food safety protocols

About the role
Every mole negro that leaves the kitchen was cooked in a pot that someone washed. Oaxacan mole takes 3 days to prepare. The clay pot it simmers in requires careful cleaning between batches. The lavaplatos who handles that clay pot correctly is protecting both a cultural object and a culinary tradition.
