Responsibilities
- Specialize in cajeta production — the Jalisco/Guanajuato goat milk caramel
- Produce cajeta in copper pot — slow-cooked goat milk caramel requiring 2–3 hours of constant stirring
- Develop cajeta-based products — cajeta-filled pastry, cajeta truffles, cajeta ice cream
- Produce other Mexican regional sweets — muéganos, pepitorias, cocadas, charamusca (toffee pulled candy)
- Engage with Tlaquepaque tourists on traditional sweet-making demonstrations
Requirements
- 2–4 years confection production experience with cajeta or Mexican regional sweets knowledge
- Cajeta copper pot cooking technique — temperature management during lengthy cooking process
- Understanding of goat milk's different protein and fat behavior compared to cow milk
- Demonstration and guest education skills (Tlaquepaque's tourist market expects food tourism experiences)

Traditional dulcería or sweet shop in Tlaquepaque or Guadalajara. Cajeta is Jalisco/Guanajuato's most beloved regional sweet — Celaya's cajeta is nationally famous but GDL has its own strong production tradition.
