Responsibilities
- Specialize in cajeta production — slow-cooked Guanajuato goat milk caramel from nearby Celaya tradition
- Produce cajeta-based pastry and confection — cajeta tarts, cajeta truffles, cajeta ice cream, cajeta crepes
- Source Irapuato strawberries for seasonal cajeta-strawberry preparations — a classic Guanajuato combination
- Develop Valle de Querétaro wine-infused confections — port-chocolate truffles, wine caramels
- Produce traditional Guanajuato sweets — charamuscas (toffee pulled candy in skull shapes), xoconoxtle conserves
Requirements
- 2–4 years confection production with cajeta or Mexican regional sweets knowledge
- Cajeta copper pot technique — slow-cooked goat milk caramel requires 2–3 hours of careful temperature management
- Fruit-based confection skill — strawberry and other Guanajuato seasonal fruits
- Tourist market communication skills
