Responsibilities

  • Specialize in birria de res — Guadalajara's most iconic dish and one of Mexico's most culturally significant stews
  • Manage overnight chivo (goat) or res (beef) slow-cooking process — 8–12 hour clay pot or covered grill preparation
  • Prepare adobo for birria — dried chile blend, spices, vinegar marinade
  • Execute consommé de birria — the rich, ruby-red broth served alongside
  • Produce handmade corn tortillas for birria tacos and quesabirria service
  • Manage weekend service production — birria is Guadalajara's Sunday tradition

Requirements

  • 3–5 years Mexican kitchen experience with birria specialization
  • Mastery of Guadalajara-style birria preparation — adobo recipe, cooking time, clay pot or hoyo technique
  • Tortilla production skills
  • Understanding of chivo (goat) butchery for traditional birria versions
  • Weekend availability — birria is the primary Sunday morning meal in GDL
