Breakfast / Brunch Specialist Chef

Responsibilities

• Lead breakfast and brunch kitchen service
• Execute hotel breakfast buffet and à la carte brunch menu
• Produce eggs Benedict stations, omelette stations, griddle work — pancakes, French toast
• Develop PV-influenced brunch specials — chilaquiles verdes, huevos motuleños, tropical fruit plates with local Nayarit fruit
• Manage morning kitchen team and breakfast prep schedule (kitchen starts 5–6 AM)

Requirements

• 3+ years kitchen experience with breakfast/brunch specialization
• Early morning schedule — breakfast chef starts before dawn
• Speed and organization — breakfast service compresses into a short but intense window
• Knowledge of both American-style brunch and Mexican breakfast traditions
