Responsibilities
- Maintain commercial refrigeration across a large hotel's F&B operation: walk-in coolers and freezers for multiple restaurant concepts, banquet kitchen refrigeration, bar refrigeration across multiple outlets, wine cellar cooling
- Manage banquet-scale cold chain: advance food preparation and cold storage for events of 200–1,000 covers requires reliable refrigeration at scale
- Service and document refrigerant systems per EC0152 requirements
- Maintain altitude-adjusted refrigeration operation — equipment at 2,240m has different refrigerant pressure characteristics than sea-level operation
- Coordinate with executive chef on cold storage capacity planning for large events
- Manage ice machine maintenance across a large property with multiple bar service points
Requirements
- EC0152 certification — mandatory
- Commercial refrigeration with large-volume F&B experience
- Altitude refrigeration awareness (CDMX-specific)
- Cold chain emergency response capability
