Refrigeration Technician — Commercial Kitchen

Responsibilities

• Maintain commercial refrigeration across all dining outlets: walk-in coolers and freezers, reach-in equipment, bar refrigeration, wine coolers, ice machines
• Perform scheduled refrigerant pressure checks and leak testing — Quintana Roo's humidity accelerates condenser coil corrosion that can cause refrigerant migration
• Service and descale ice machines — hard water scale reduces ice production capacity; monthly descaling program required
• Manage condenser coil cleaning schedule — salt-laden coastal air causes rapid condenser fouling requiring more frequent cleaning than inland properties
• Respond to refrigeration cold chain emergencies with immediate priority — food safety is non-negotiable
• Coordinate with executive chef on refrigeration capacity requirements for themed dinner events and buffet expansions

Requirements

• EC0152 certification — mandatory
• Commercial refrigeration experience in food service or hotel environment
• Coastal condenser maintenance awareness (salt fouling of condensers)
• Emergency cold chain response competency
