Responsibilities
- Support banquet setup: transport china, glassware, and silverware from stewarding to banquet halls and set up service stations before function begins
- Operate dishwashing during and after large-scale banquet events: event banquets generate concentrated plate returns at the end of service requiring rapid turnaround
- Clean and return banquet equipment after events: chafing dishes, serving vessels, hotel pans, and transport carts
- Maintain banquet pantry organization: clean, sorted, and inventoried plateware and glassware ready for multiple simultaneous events
- Coordinate with banquet team on equipment needs per event BEO (Banquet Event Order)
- Clean banquet kitchen and service areas after functions — sometimes finishing after midnight on large evening events
Requirements
- Physical strength for transporting dish racks, chafing dishes, and full-loaded service carts
- Ability to work event-based schedules including evening and weekend banquet shifts
- Fast production pace during banquet dish return turnarounds
- Team coordination with banquet service team

About the role
The evening gala for 1,200 guests ends at 11pm, and 1,200 plates, 2,400 glasses, and 1,200 sets of silverware all arrive at the dishwash area within the same 45-minute window. Managing that surge — keeping the machine running, the racks moving, the clean supply flowing back to storage — is a logistics challenge that the banquet steward solves under pressure at the end of the night.
