Senior Steward / Dishwash Lead

Responsibilities

• Lead stewarding team: coordinate 2–4 stewards across kitchen and banquet areas; manage shift schedules, task assignments, and quality inspection
• Manage Distintivo H compliance records: temperature logs, chemical concentration testing, and monthly documentation submission to hotel food safety manager
• Train and onboard new stewards: machine operation, chemical safety, proper handling of specialty service items, and kitchen closing procedures
• Manage cleaning supply inventory: maintain adequate stock of detergents, degreasers, sanitizers, and rinse aids; track consumption and coordinate purchase orders with purchasing department
• Deep-clean schedule management: plan and coordinate weekly equipment deep-cleans across restaurant and banquet kitchen areas
• Coordinate with F&B management on any special events or high-occupancy periods that require additional stewarding resources

Requirements

• 2+ years hotel stewarding with team leadership experience
• Distintivo H compliance management
• Training and development ability for stewarding team
• Budget and inventory tracking for departmental supplies
