Responsibilities
- Execute full nightly deep-clean of main resort kitchen after dinner service: clean all cooking equipment, prep surfaces, grease traps, and floors to chef's operational standard
- Deep-clean industrial dishwashers on nightly schedule: drain, scrub interior, descale spray arms, and refill chemical tanks ready for morning breakfast service
- Clean walk-in refrigerators and freezers: floor scrubbing, shelf wiping, drain clearing — health code and Distintivo H requirement for regular cold storage cleaning
- Degrease kitchen exhaust systems on scheduled basis: hood surfaces, filter removal and cleaning, duct exterior wipe-down
- Document all cleaning activities in nightly deep-clean log — required for Distintivo H compliance record-keeping
- Set up the dishwash area and breakfast plateware staging ready for the morning steward team starting at 5am
Requirements
- Night shift availability — full commitment to overnight schedule (11pm–7am or similar)
- Kitchen deep-clean technique: heavy degreasing, floor care, walk-in maintenance
- Attention to detail in unsupervised overnight work environment
- Basic Distintivo H cleaning log documentation

Work environment
Night stewarding operation at a large resort. Unsupervised deep-clean work in an empty kitchen where the overnight team prepares the entire F&B operation for the next day's service.
About the role
The clean kitchen that the breakfast chef walks into at 5am was delivered by the night steward who finished at 3am. The grease that accumulates on the hood surfaces after a full day's service, the food debris in the floor drains, the dishwasher filters clogged with a day's worth of food particles — all of it gone, every night, so the morning starts clean. Night stewarding is invisible to everyone who isn't a chef arriving early, and that invisibility is the job done right.
