Responsibilities
- Support banquet setup and breakdown for large-scale convention events: transport and stage thousands of place settings for conference dinners, award ceremonies, and corporate galas
- Operate high-capacity dishwashing during post-banquet dish return — convention hotel banquets produce massive synchronized dish returns that require organized rapid-response dishwashing
- Maintain banquet inventory of plateware, glassware, and silverware: track quantity, document breakage, organize storage between events
- Coordinate with banquet operations manager on equipment requirements per BEO — events often run simultaneously in multiple rooms
- Clean banquet kitchen and service areas after events: large kitchen deep-clean after gala events that finish past midnight
- Rotate through restaurant stewarding during non-event periods
Requirements
- High-volume banquet stewarding experience preferred
- Physical strength for heavy transport of full dish racks and banquet equipment carts
- Event schedule flexibility: convention hotel events require evening and weekend availability
- Inventory tracking ability for large plateware and glassware stocks

About the role
The final scene of a convention hotel gala — 800 guests, five-course dinner, 4,000 items of service on the tables — ends with all of it coming back to the dishwash area within 45 minutes. The banquet stewarding team that organized the staging before service, ran the transport during service, and then manages the return surge without bottlenecking the kitchen exit is performing a logistical operation that has a real impact on the hotel's reputation for event execution.
