Senior Steward / Dishwash Lead

Responsibilities

• Lead dishwash team across main kitchen and restaurant outlets: coordinate task assignments, manage pace during service peaks, cover shifts when needed
• Train new stewards on industrial machine operation, chemical handling safety, and Distintivo H log requirements
• Manage equipment maintenance schedule: machine descaling, rack replacements, spray arm cleaning — coordinate with engineering for significant repairs
• Monitor biodegradable cleaning product compliance at eco-certified properties: check chemical supplier documentation and verify product list approval
• Oversee end-of-shift kitchen clean-down: inspect quality of closing clean to chef's specification before signing off shift
• Liaise with kitchen brigade on any plateware or cookware shortfalls during service

Requirements

• 2+ years hotel dishwashing with team coordination experience
• Industrial dishwasher troubleshooting and maintenance scheduling
• Eco-cleaning product knowledge for Riviera Maya certification-compliant properties
• Leadership ability in a fast-paced team environment
