Responsibilities

  • Wash all restaurant and kitchen items using only SEMARNAT-approved biodegradable detergents — no conventional phosphate-based cleaning chemicals
  • Hand-wash the property's artisanal Mexican ceramics, handmade wooden serving boards, and natural-fiber service items that cannot be machine-washed
  • Manage grey water from kitchen dishwashing in compliance with property's wastewater treatment system — typically passed through grease traps and bio-treatment before disposal
  • Maintain kitchen and restaurant area cleanliness using eco-approved surface cleaners: no bleach or chlorinated products in cenote-adjacent zones
  • Sort and separate organic kitchen waste into compost system: most Tulum eco-properties route kitchen scraps to on-site composting
  • Clean shared outdoor dining and kitchen structures: open-air kitchen design common in Tulum properties means cleaning includes outdoor surfaces, thatch roof areas, and natural-material finishes

Requirements
