Steward — Restaurant & Beach Club

Responsibilities

• Manage dishwashing for beach club restaurant operation: organic crockery, natural-fiber mats, wooden serving items, handblown glass — all requiring hand technique rather than machine wash
• Clean cooking equipment in boutique kitchen: mainly simple cooking surfaces, gas burners, and communal prep areas — maintain throughout service without disrupting active cooking
• Support beach area cleanup: clean plates and glasses removed from beach service need immediate washing and return during peak daytime hours
• Manage bar glass cleaning for palapa bar: hand-wash cocktail glasses, vintage-style mason jars, and ceramic cups used for cocktail service in beach club environment
• Maintain kitchen and bar area to health department standard: Tulum's municipality requires basic food safety compliance even at informal eco-properties
• Support set-up of dining areas with clean service items before meal services

The handblown glass the guest is drinking their mezcal from was washed by hand, dried with a cotton cloth, and set on the wooden bar shelf before service. There's no machine for it — it would break.
