Responsibilities
- Supervise a stewarding team of 8–20 members: schedule shifts across 24-hour resort F&B operation, coordinate coverage for sick leave and peak occupancy periods, conduct daily team briefings
- Manage Distintivo H compliance for all dishwashing and kitchen hygiene operations: oversee daily temperature logs, chemical concentration testing, and monthly documentation submission to hotel food safety coordinator
- Control chemical program: select and manage approved detergent, rinse-aid, sanitizer, and degreaser products; maintain supplier relationships and supply chain continuity; oversee correct dosing and safe chemical handling by the team
- Coordinate with executive chef and kitchen brigade on any plateware, cookware, or cleanliness issues — serve as the primary operational liaison between kitchen production and stewarding support
- Manage equipment maintenance schedule: dishwasher descaling, rack replacement, spray arm maintenance, and coordination with engineering for major equipment repairs
- Train and develop team members: new steward onboarding, safety training, machine operation certification, and career progression coaching
Requirements
- 4+ years hotel stewarding with department supervisory experience
- Distintivo H compliance management — documentation, audit preparation, corrective action
- Chemical program management for a large stewarding department
- Team scheduling and shift management for 24-hour F&B operation
- Communication skills for daily liaison with executive chef and F&B management
