Stewarding Supervisor — Colonial & Hacienda Hotel Properties

Responsibilities

  • Supervise stewarding team across colonial hotel and hacienda properties: coordinate 2–5 stewards; manage inter-property scheduling where the operation covers both an urban hotel and a hacienda outside the city
  • Develop and manage hard-water dishwashing program: establish bi-weekly minimum descaling schedule; calibrate rinse-aid concentration for spot-free glass in Mérida's high-mineral-content water; conduct weekly glassware spot-check inspections
  • Lead Yucatecan artisanal service item care training: train team on traditional pottery handling, clay vessel washing technique, correct storage to prevent chip damage, and the cultural significance of the items — stewards who understand why the piece matters tend to handle it more carefully
  • Manage extreme heat kitchen operations (March–May peak): intensify surface sanitization frequency at high ambient temperatures; ensure team hydration and rest break schedules during heat peak; monitor bacterial growth risk on food-contact surfaces more carefully in extreme temperature conditions
  • Lead Distintivo H compliance documentation for both properties: maintain separate logs per property, coordinate with hotel food safety coordinator, prepare for inspections
  • Manage chemical and supply procurement: Mérida's geographic remoteness from major distribution centers requires planning ahead to avoid stock gaps in specialized hard-water treatment products

Requirements

  • 3+ years hotel or restaurant stewarding with supervisory experience
  • Hard-water dishwashing management — descaling schedules, rinse-aid calibration, glassware quality program
  • Yucatecan artisanal service item handling and team training ability
  • Extreme heat kitchen operations management
  • Inter-property coordination including transport logistics
