Responsibilities
- Supervise stewarding team of 8–20 members across 24-hour hotel F&B operation: restaurant service, in-room dining, banquet operations, and kitchen cleaning — schedule and coordinate continuous coverage without service gaps
- Manage altitude-adjusted Distintivo H compliance: calibrate dishwashers for 2,240m operation; verify final rinse temperature reaches minimum 82°C for adequate pathogen kill at altitude; maintain documentation demonstrating altitude-adjusted compliance
- Develop and maintain post-seismic kitchen inspection protocol: after significant tremors, lead team in rapid inspection of dishwash racks, glass storage, walk-in shelving, and any overhead equipment that may have shifted — coordinate with engineering on structural concerns before resuming kitchen operations
- Oversee 24-hour stewarding coverage: in-room dining runs continuously; ensure overnight team is scheduled, briefed, and held to the same cleanliness standard as the day team
- Lead large-scale banquet stewarding operations: develop pre-event setup plans, manage during-event production, coordinate the post-event surge dish return with team
- Report monthly to F&B director: stewarding KPIs, compliance status, staffing costs, and equipment condition summary
Requirements
- 4+ years large hotel stewarding with department supervisory experience
- Altitude-adjusted Distintivo H compliance management for CDMX operation
- Post-seismic inspection protocol development and team briefing
- 24-hour shift scheduling for continuous F&B coverage
- Convention banquet stewarding operations management
