Responsibilities

  • Supervise eco-hotel stewarding team: coordinate 2–5 stewards across kitchen, bar, and outdoor dining service areas; manage schedules and quality in a small but environmentally complex operation
  • Manage the property's approved eco-chemical program for stewarding: all products must be biodegradable and SEMARNAT-compliant; maintain supplier documentation and product MSDS files for certification audit
  • Oversee artisanal service item care training: train team on correct handling of barro negro pottery, handblown glass, clay cooking vessels, and natural-fiber service items — breakage protocols, washing technique, storage standards
  • Coordinate grey-water compliance: ensure kitchen dishwashing grey water flows through the property's grease trap and bio-treatment system before disposal; monitor for any blockages or system failures
  • Manage organic waste routing from kitchen: food scraps, coffee grounds, and non-recycled organics directed to composting system; coordinate with kitchen team on waste separation at source
  • Prepare eco-certification stewarding documentation for audits: Rainforest Alliance, Distintivo S, or property-specific certification requires specific stewarding records including chemical use, waste tracking, and water consumption

Requirements

  • 3+ years hotel stewarding with supervisory experience in an eco-property environment
  • SEMARNAT-compliant chemical program management for Tulum/biosphere zone operations
  • Artisanal service item care protocols for Tulum boutique hotel inventory
  • Eco-certification documentation preparation and audit support
  • Grey-water and organic waste management systems knowledge
