Responsibilities
- Lead the banquet operations team: supervise 8–25 banquet servers, setup crew, and bartenders across all event functions; hire, train, schedule, and performance-manage the team
- Execute BEOs flawlessly: translate the event coordinator's banquet event order into precise operational instructions for the team — setup diagrams, service timing, menu delivery sequence, bar activation, and breakdown schedule must all be communicated, confirmed, and executed
- Manage concurrent event operations: Cancún resort properties often run 2–4 events simultaneously across multiple function spaces — the Banquet Operations Manager coordinates which team is in which space, monitors progress across all rooms, and makes real-time interventions when any event encounters a timing issue
- Coordinate live event kitchen synchronization: banquet service timing requires that the kitchen and service team are synchronized to the minute for plated meal service courses — the manager maintains direct communication with the Executive Chef or banquet chef throughout the event
- Manage décor and setup team integration: floral installation, table setting, linen placement, AV confirmation, and room reset between ceremony and reception require a coordinated setup team working to precise timelines — the manager oversees this coordination
- Handle live event deviations calmly: late arrivals, weather changes requiring venue-to-indoor transition, catering count adjustments, and AV failures all require immediate resolution — the manager is the authority on event-day decisions that affect operations
Requirements
- 3+ years banquet operations experience with team leadership responsibility
- Deep F&B service knowledge: plated and buffet service formats, bar operations, wine service, and the service choreography of formal event dining
- BEO literacy and operational translation to team briefing
- Multi-event concurrent management capability
- English and Spanish bilingual for communication with international wedding clients who attend their own events
