Responsibilities
- Lead the banquet and event service team at an ultra-luxury Los Cabos resort: manage and develop a team of 12–30 banquet service professionals across wedding, corporate, and incentive event functions
- Execute BEOs at ultra-luxury standard: every detail of the banquet event order must be interpreted at the highest possible quality — table setting to silver placement angle, wine service protocol, inter-course timing, and service choreography for key event moments (first dance service pause, cake cutting, toast sequence) must all be flawlessly managed
- Develop and maintain a formal banquet service training program: at ultra-luxury level, informal team briefing is insufficient — the manager develops written service standards, runs formal pre-service briefings, and conducts post-event debriefs with specific technique feedback
- Manage Los Cabos wind and heat service adaptations: strong Baja northerlies require weighted décor, covered flame management, and service choreography that protects food temperature during outdoor service; desert heat during afternoon outdoor events requires adapted timeline management and guest comfort provisions
- Coordinate with the Executive Chef on kitchen-to-service-team synchronization for multi-course dinners: at luxury level, plate timing, garnish application, and service choreography between kitchen and dining room are managed in real time to the second
- Produce weekly operational performance reports and event quality metrics for the Director of F&B
Requirements
- 4+ years banquet management with luxury resort or five-star hotel experience
- Formal service training program design and delivery capability
- Los Cabos environmental management — wind, heat, and desert conditions specific operational protocols
- Team development and performance management at luxury service level
- English fluency for direct communication with ultra-luxury international event clients
