Banquet Operations Manager — Five-Star Hotel

Responsibilities

• Lead the five-star hotel's banquet operations team of 15–40 service professionals across the full event calendar: domestic luxury weddings, corporate conference dining, product launch galas, and social celebrations are all within scope
• Manage concurrent multi-ballroom event operations: the Polanco five-star hotel may host 4–6 events simultaneously in different function spaces — the manager coordinates team deployment, monitors service quality across all spaces, and is the authority on real-time operational decisions in each
• Execute the domestic Mexican wedding service sequence: the CDMX domestic luxury wedding follows a specific cultural sequence — cocktail reception, vals, dinner service, multiple entertainment transitions, hora loca, and late-night continuation — each segment has specific service requirements and the manager ensures the team executes each without prompting
• Navigate altitude-specific service considerations: at 2,240m above sea level, certain beverages behave differently (carbonation, wine oxygenation), cooking temperature adjustments affect food delivery timing, and physical exertion during high-volume setup requires team pace management — the experienced CDMX banquet manager incorporates these factors into planning
• Develop and deliver team training on seismic emergency protocols: CDMX is seismically active and the hotel's events team must be trained on evacuation procedures for events in progress — the banquet manager ensures this training is current and that the team knows their role in a seismic event response
• Produce weekly team performance assessments and monthly operational improvement plans

Requirements

• 4+ years banquet management with domestic Mexican events experience
• Multi-event concurrent management at five-star hotel scale
• Deep knowledge of domestic Mexican wedding cultural sequence and service expectations
• Altitude-specific operations knowledge
• Seismic protocol and emergency response familiarity
• Spanish native; English professional fluency for international corporate event clients
