Banquet Operations Manager — Eco-Resort & Outdoor Venue

Responsibilities

• Lead banquet operations for eco-boutique and outdoor venue events in the Riviera Maya: manage setup and service teams for beach ceremonies, jungle reception spaces, and cenote-adjacent events that require full banquet execution in a natural setting
• Manage generator-dependent power logistics: eco-resort events in the Riviera Maya often operate on generator power for lighting, refrigeration, and AV — the Operations Manager confirms generator capacity, fuel planning, and contingency power for each event
• Develop outdoor service choreography: service choreography for a formal dinner in a jungle clearing — server routes through uneven terrain, mobile bar placement for access without disrupting the natural setting, lighting at service level for safe navigation — requires adaptation of standard banquet protocols for outdoor application
• Enforce biodegradable product standards: Riviera Maya ecological venue events use biodegradable tableware, natural fiber linens, and beeswax or natural candles — the manager ensures that all banquet supplies comply and that no synthetic or non-biodegradable products enter the event space
• Coordinate insect and pest management protocols for outdoor evening events: evening outdoor events in the Riviera Maya require proactive insect management that is consistent with ecological standards — the manager coordinates with the property's environmental team on approved protocols
• Manage weather contingency activation: when outdoor events require an indoor backup due to rain or wind, the manager activates the contingency setup with their team, communicating clearly with the coordinator and couple throughout

Requirements

• Banquet operations experience with outdoor and non-standard venue management
• Generator and temporary power system familiarity
• Biodegradable product compliance management
• Outdoor service choreography adaptation
• Spanish and English bilingual; calm authority in weather-response situations
