Responsibilities
- Specialize in live-fire cooking across charcoal, wood, and open-flame formats
- Execute proteins over live fire — whole-roasted meats, live fire fish, vegetable ember cooking
- Manage fire temperature, wood selection, and smoke character for different preparations
- Develop ember and ash cooking techniques — ember-roasted vegetables, ash-cured preparations
- Collaborate with chef on fire-focused menu development
- Source wood and charcoal — different woods (mezquite, oak, cherry) produce distinct flavors and smoke characteristics
Requirements
- 5+ years kitchen experience with live-fire specialization
- Deep understanding of fire chemistry — wood combustion, heat zones, smoke flavor profiles
- Physical stamina and heat tolerance for sustained fire cooking
- Creative approach to fire as a flavor tool, not just a heat source
